If you have any leftover bread, make delicious bread upma. To prepare bread upma, you need diced bread pieces, chopped vegetables, tomato, tomato ketchup, chopped ginger and garlic, sliced green chillies, and chopped onion. Saute onion over low flame. Add chopped vegetables, ginger, garlic, green chilli and tomato. Now add tomato ketchup and salt and cook it properly. Now add the diced bread to this and mix them well. You can garnish this with coriander leaves.
Vegetable rava idli
It is very easy to prepare vegetable rava idli. Soak rava in curd for 10 minutes and keep the consistency thick. To this batter add cooked vegetables, or sauted vegetables. Alternatively you can add vegetables to a ladle of batter and cover it with another while moulding the idli in idli maker. Steam the idlis for 10 minutes.
Vegetable Omelette
This is the simplest breakfast and is one of the most popular one too. To prepare omelette you need 2-3 eggs. Break the shell and beat them properly. Add salt and black pepper powder to the beaten eggs. To this you can add stir fried vegetables, mushroom, spinach. Now cook the egg with butter on medium flame. You can also add cheese, sliced ham, and salmon to this as well.
Whole wheat vegetable dosa
Prepare the batter by mixing flour, salt and water. Keep the consistency medium thick. Keep this aside for 10 minutes. To the batter add chopped vegetables. Now add salt to this. You can temper the dosa with oil, curry leaves and mustard seeds. Now cook it on a greased pan just like you cook a dosa. Keep the flame low and cook it properly on both sides.
Poha
Poha is a quintessential Indian breakfast. Soak poha in water for 2-3 minutes and strain it using a strainer. Pop some mustard seeds in a kadai with oil and cook some onion. Add vegetables to this and cook it properly. Now add the soaked poha and mix everything well. You can add lemon juice to this before eating.
